The History of Recipes
We are able to track the history of meal recipes far back into antiquity, in fact as far back as early Egypt, and possibly even further. Interesting though that maybe, generally, these old recipes were just primitive hieroglyphic recipes for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote some documents showing how to cook the recipes cooked by his fellow Romans. In his publication, he describes how the meals were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the ancient chefs made use of a wide range of herbs and spices, including a few that will be familiar to modern chefs for example bay, fennel and asafoetida. As we move on, we find some interesting books which appeared in the 1300s ; a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Amusingly, these have no connection with the indian food that is popular today, but rather descriptions of the types of meals cooked for the rich people of that time. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, such as parsley and basil. These new spices and herbs caused an outbreak in recipe manuscripts, many of which still exist in private collections. During the following few hundred years, the powerful and wealthy houses strove to offer the most extravagent meals, and because of this cooks and their recipe collections were highly sought after. Even so, it wasn`t until the 1800s that fine cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and publishing recipes common in their social group. By the advent of the 20th century, cook books are greatly in demand mostly as a result of higher levels of literacy, more free time and being a little richer. The revolution that is television gave us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes just like those on our site. |
