The History of Recipes
It is quite feasible to trace the history of recipes back into the far past, certainly as far into history as pharonic Egypt, and potentially, even further back. In practice though, mostly, these old recipes were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a man called Apicius created a few documents describing recipes cooked by the Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. Aspicius describes how the Roman cooks made use of many different aromatic flavours, including many that are still in use today for example bay, fennel and asafoetida. Moving on, we have a couple of interesting recipe books which were published in the fourteenth century ; a book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the indian curry that is popular today, but rather recipes for the types of food eaten by the nobility of that period. Later, in the 15th century, knights returning from the crusades brought us many foods and herbs from Arab countries, including spices like basil and coriander. The introduction of these new tastes caused a surge in books on cookery, many of which still exist in private libraries. By the advent of the 1900s, cooking publications are in high demand, mostly as a result of more people being able to read, people having increased spare time and a general increase in wealth. |
