The History of Recipes
We are able to read the history of meal recipes way back into the distant past, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that maybe, these, old cook books were just very simple pictorial instructions for preparing food.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, are a few clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As we move into The time of the romans around 25BC a man called Apicius assembled a few documents detailing recipes prepared by the Romans. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvres, entrees and afters, a very modern way of dining. He also describes how the Roman cooks were skilled in the use of a good variety of aromatic flavours, including a few you will know like thyme, mint and asafoetida. During the next few centuries, the powerful families of the West competed to lay on the most exotic banquets, and as a consequence, chefs and their collection of recipes were highly sought after. Even so, it wasn`t until the 1800s that cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, trying out, and publishing recipes to allow everyone to enjoy them. By the advent of the 20th century, recipe books are highly popular mostly due to more people being able to read, more spare time and being a little richer. The revolution that is television brought us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes such as those found on sites such as the one you are reading now. |
