The History of Recipes
Food historians have traced the existance of recipes far back into the distant past, at least as far into history as the Egypt of the Pharoahs, and maybe further still. In practice though, generally, these old cook books were just primitive pictorial recipes for preparing food.
Later on, in Roman times 25BC a roman called Apicius created a few documents detailing recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into starters, main course and desserts, a very modern way of dining. Additionally, he recounts how the Roman chefs used many different spices, including some that we all recognise like bay, fennel and asafoetida. In the fifteenth century, people returning from the crusades brought us many foods and spices from the Middle-East, including coriander, parsley, basil and rosemary. These new culinary innovations led to a torrent in books on cooking, the majority of which are kept safe in private collections. By the arrival of the 1900s, cookbooks were in great demand, as a result of increased literacy, people having more leisure time and a general increase in wealth. |
