The History of Recipes
Academics have traced the existance of recipes back into history, in truth as far back into history as the early Egyptians, and potentially, even further back. Interesting though that is, these, early cookbooks were just very simple hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. During Roman times around 25BC a man called Apicius compiled a few documents which described recipes enjoyed by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and dessert, a very modern way of dining. This early Roman chef describes how the ancient Romans were skilled in the use of many different spices and herbs, including a few that are still present in modern kitchens such as thyme, rue and dill. In the fifteenth century, the Crusaders brought back many new spices and herbs from middle-east cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new culinary ideas caused an eruption in recipe manuscripts, most of which are now in private collections. During the succeeding few hundred years, the wealthy families of the West tried to serve up the most exotic banquets, and because of this the best chefs and their recipes were highly sought after. However, it wasn`t until the 19th century that haute cuisine and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, testing, and recording popular recipes of the day. By the arrival of the 20th century, cooking books were increasing in popularity mostly due to higher levels of literacy, people having increased leisure time and being a little richer. Like it or not, the introduction of television brought us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everyone to access massive numbers of recipes like those on this recipe site. |
