The History of Recipes
We are able to trace the history of written recipes way back into history, at least as far back into recorded history as the Egyptians, and maybe further still. Interesting though that maybe, in the main part, these early cook books were just primitive hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius compiled a collection of scripts describing recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were split into appetizers, entrees and afters, something that is very familiar to us today. Aspicius informs us how the cooks of his times used many spices, including a few that will be familiar to modern cooks for example thyme, rue and parsley. As we move on, there were a couple of interesting books from the 14th Century ; a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Although the titles sound familiar, these two books are nothing to do with the spicy food that appears on menues today, but instead descriptions of the types of food prepared for the upper classes of the time. Later, in the fifteenth century, knights returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, including rosemary and coriander. The introduction of these new herbs and spices led to an outbreak in manuscripts on cookery, some of which are kept safe in private collections. By the advent of the 20th century, cookery publications are in high demand, due to higher levels of literacy, people having more leisure time and being a little richer. |
