1 cup garlic, peeled & minced
1 tbsp onion, chopped
2 tbsp olive oil
2/3 cup tomatoes
1 qt stock
1 pepper
1 croutons
Directions
Combine garlic & onion in a bowl. Heat oil in a large pot. Add
garlic & onion & saute till soft. Do not brown. Add chopped tomatoes
& stir in well. After a few minutes, stir in stock & pepper. Simmer
for 15 minutes. Add salt if desired.
Serve with croutons.

The History of Recipes
It is quite possible to trace the history of recipes back into the far past, certainly as far as ancient Egypt, and quite possibly further than that. In practice though, sadly, these early cookbooks were just basic pictorial instructions for preparing meals.
During Roman times 25BC a man called Apicius created a number of documents detailing recipes prepared by wealthy Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvre, main course and afters, a very modern way of dining. Additionally, he describes how the ancient cooks were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks for example thyme, mint and dill. In the fifteenth century, knights returning from the crusades brought us a variety of spices and herbs from the East, including coriander, parsley, basil and rosemary. These new culinary innovations caused an increase in cookery books, the majority of which are kept safe in private libraries. By the arrival of the 1900s, cooking publications were highly popular mostly due to increased literacy, people having increased free time and having more money to spend. |
