The History of Recipes
Recipes as a concept can be observed back into the far past, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. Having said that, mostly, these old cook books were just very simple pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to historians are a few tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Progressing into The time of the roman empire around 25BC a man called Apicius created a number of documents which described recipes cooked by his fellow Romans. He tells us how the roman meals were divided into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef tells us how the cooks of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks for example thyme, mint and dill. As our culinary historical trip moves to more modern times we have two books published in the 14th Century : one book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the spicy food that we all know today, but rather recipes for the types of food prepared for the rich people of that time. In the 15th century, knights returning from the crusades brought us many new foods and spices from Arab cooking, such as parsley, basil and rosemary. These new foods and spices prompted a torrent in recipe manuscripts, most of which are now in academic collections. For the centuries that followed, the upper-class families of Europe tried to offer the most exotic meals, and consequentially the best chefs and their collection of recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and recording recipes to help cooks of their time. By the time we get to the 20th century, cooking books are starting to become popular mostly due to better eduction, people having increased spare time and having more disposable income. The introduction of the TV brings us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like the ones you can find on this web site. |
