The History of Recipes
Transcribed cooking instructions as an idea can be observed back into history, in truth as far as the ancient Egyptians, and possibly even further. Having said that, mostly, these old cook books were just very simple hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to historians is a series of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, he describes how the meals were split into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. He also recounts how the ancient Romans used many aromatic flavours, including a few that will be familiar to modern cooks like thyme, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods and spices from the Middle-East, including coriander, parsley, and basil. These new herbs and spices prompted an eruption in publications on food, some of which are now in private collections. For the decades that followed, the upper-class families of the West strove to serve the most extravagent banquests, and as a result the best cooks and their recipes became highly prized. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, trying out, and publishing recipes to allow everyone to enjoy them. The arrival of television brings us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like the ones you can find on our site. |
