The History of Recipes
It is quite feasible to trace the history of recipes back into distant history, certainly as far into history as pharonic Egypt, and possibly even further. Interesting though that is, mostly, these early cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, are some ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Moving on, there are a couple of interesting recipe books which were published in the 1300s ; a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are not about the indian curry that we all know today, but rather accounts of the types of food prepared for the rich and powerful of those days. Later, in the 15th century, knights returning from the crusades brought us many foods and spices from Arab countries, including spices such as rosemary and coriander. These new foods and tastes created an increase in books on cookery, the majority of which are now in private cookery archives. During the following few centuries, the wealthy families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and as a consequence, chefs and their recipe collections were highly sought after. However, it was during the nineteenth century that cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, trying out, and publishing popular recipes of the day. The revolution that is television brought us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through thousands of recipes just like those on sites such as this. |
