The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into ancient history, in truth as far into history as the ancient Egyptians, and maybe even further. However, generally, these early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Progressing into The time of the romans around 25BC a man called Apicius created a collection of scripts which described recipes cooked by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were split into starters, entrees and afters, a very modern way of dining. Additionally, he tells us how the cooks of his times used a wide range of aromatic flavours, including many that are still in use today such as thyme, mint and asafoetida. Moving on, we have two interesting recipe books dating from the 1300s : a recipe book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, they are nothing to do with the curry that we all know today, but rather recipes for the types of food enjoyed by the upper classes of the time. Later, in the 15th century, knights returning from the crusades brought us many new spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and spices was responsible for an outbreak in manuscripts on food, the majority of which still exist in private collections. During the following few centuries, the rich families of Europe tried to serve up the most exotic banquets, and because of this chefs and their collection of recipes were highly sought after. Nevertheless, it was during the 1800s that formal cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. By the advent of the 1900s, cooking publications are starting to become popular mostly due to higher levels of literacy, leisure time and being a little richer. Like it or not, the introduction of TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to search through thousands of recipes just like those on sites such as the one you are reading now. |
