The History of Recipes
It is quite possible to track the history of recipes back into the distant past, in fact as far into history as the Egyptians, and maybe even further. Having said that, mostly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe found, according to food historians is a collection of ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes cooked by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main course and desserts, something that is very familiar to us today. He also tells us how the ancient Romans were skilled in the use of many different aromatic flavours, including some that we all recognise for example thyme, mint and dill. Closer to modern times, there are some interesting books from the 1300s ; a cookery book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the indian curry that appears on menues today, but rather descriptions of the types of meals prepared by the cooks of the upper classes of that period. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the East, including spices such as basil and coriander. The introduction of these new foods and spices led to a torrent in recipe books, some of which still exist in academic collections. During the succeeding few centuries, the powerful families of Wesstern Europe strove to serve up the best banquets, and as a result chefs and their recipe collections could command a high salary. Notwithstanding that, it was during the nineteenth century that cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, trying out, and recording recipes of the day. By the time we get to the twentieth century, recipe publications were greatly in demand due to increased literacy, leisure time and having more money to spend. Like it or not, the introduction of TV brought us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on our site. |
