The History of Recipes
Experts have proved the existence of recipes far back into antiquity, in truth as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, mostly, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered, according to experts in ancient history is a collection of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius compiled a collection of scripts describing recipes cooked by the Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, something we still use today. Aspicius informs us how the Roman chefs were skilled in the use of many different spices, including a few that will be familiar to modern chefs such as thyme, rue and parsley. Later, in the fifteenth century, the Crusaders brought back many foods and herbs from the holy land, such as coriander, parsley, basil and rosemary. These new foods and spices caused an outbreak in recipe books, most of which are kept safe in private libraries. For the decades that followed, the wealthy families of the West competed with each other to lay on the most extravagent meals, and consequentially cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that cookery and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing the recipes that were being prepared for the better households. By the time we get to the 1900s, cooking books were in high demand, mostly as a result of better eduction, more free time and a general increase in wealth. The arrival of television brought us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes like those on this recipe site. |
