The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions far back into antiquity, certainly as far into history as the Egyptians, and possibly even further than that. However, these, old cookbooks were just basic pictorial instructions for food preparation.
Progressing into Roman times around 25BC a roman called Apicius wrote some scripts describing recipes cooked by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, main meal and afters, a very modern way of dining. Aspicius also informs us how the Roman chefs used many herbs and spices, including some that we all recognise such as bay, fennel and asafoetida. For the centuries that followed, the powerful and wealthy houses competed with each other to lay on the best banquets, and consequentially cooks and their recipe collections increased in prestige. Nevertheless, it was during the 19th century that cooking and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and recording the recipes that were being prepared for the better households. By the advent of the twentieth century, cook books are in high demand, due to better eduction, more free time and a general increase in wealth. |
