The History of Recipes
Food historians have found proof that recipes existed back into the distant past, in truth as far back as the Egyptians, and possibly even further than that. Interesting though that maybe, in the main part, these early records were just primitive hieroglyphic instructions for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to academics is a series of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Later on, in Roman times 25BC a man called Apicius assembled a number of documents which described recipes cooked by the Romans. In his scrolls, Apicius describes how the roman meals were separated into starters, entrees and desserts, something that is very familiar to us today. Additionally, he recounts how the cooks of his times used a wide range of aromatic flavors, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. During the succeeding few hundred years, the powerful families of Wesstern Europe tried to offer the best banquets, and because of this cooks and their recipe collections were much in demand. Even so, it was during the 1800s that cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and publishing recipes common in their social group. By the arrival of the 1900s, recipe books are starting to become popular due to higher levels of literacy, people having more free time and having more disposable income. |
