The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into the distant past, in fact as far into history as pharonic Egypt, and potentially, even further back. Having said that, in the main part, these old cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
Later on, in The time of the romans 25BC a roman called Apicius created a few scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the roman meals were split into appetizers, entrees and desserts, a style of dining still practiced today. This early Roman chef recounts how the Roman cooks made use of a wide range of aromatic flavours, including many that are still in use today like basil, rue and dill. Over the succeeding few centuries, the families of Europe strove to serve up the most extravagent banquests, and because of this the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s the formal cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and recording recipes that were common in the better off homes of the day. When we get to the 20th century, cookbooks were greatly in demand as a result of higher levels of literacy, people having increased spare time and a general increase in wealth. |
