4 cup applesauce
1 tbsp lemon juice
4 egg yolks
4 egg whites
8 tbsp sugar
1/2 tsp vanilla
Directions
Grated rind of 1 Lemon Preheat oven to 300 deg F.
Combine applesauce, lemon juice and rind. Beat in egg yolks and pour
into baking dish. In separate bowl, beat egg whites until peaks form.
Gradually add sugar while continuing to beat. Add vanilla.
Mix approx. 1/4 of meringue thru applesauce and spoon remaining
meringue on top.
Bake 15 minutes. Good hot or cold.

He describes how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the Romans made use of many different aromatic flavours, including a few that will be familiar to modern chefs for example thyme, mint and dill. During the next few hundred years, the powerful families of the West competed with each other to lay on the most exotic meals, and as a result the best chefs and their recipe collections could command a high salary. Nevertheless, it was during the 19th century that cookery and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and publishing the recipes of their peers. Like it or not, the introduction of TV brought us cooking programs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like those on our site. |
