The History of Recipes
It is quite possible to track the history of recipes back into distant history, at least as far back as the ancient Egyptians, and possibly even further. Interesting though that is, sadly, these old records were just very basic hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to historians are a few clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. During Roman times 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into starters, main course and desserts, something that is very familiar to us today. Aspicius tells us how the cooks of his times were skilled in the use of a good variety of herbs and spices, including some familiar names like bay, rue and parsley. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and tastes was responsible for an increase in recipe books, some of which still exist in private cookery archives. By the time we get to the twentieth century, recipe books were highly popular mostly due to higher levels of literacy, increased leisure time and having more money. Like it or not, the introduction of TV brought us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on our web site. |
