The History of Recipes
Written recipes as an idea can be traced way back into the distant past, certainly as far as early Egypt, and quite possibly further than that. Having said that, sadly, these early cookbooks were just basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe found, according to food historians are some ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Later on, in The time of the romans 25BC a man called Apicius assembled a collection of scripts detailing recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. He also informs us how the early Romans used many herbs, including some familiar names such as thyme, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from the Middle-East, including spices like coriander, parsley, and rosemary. These new foods and spices caused an outbreak in recipe publications, many of which are kept safe in private collections. Over the succeeding few centuries, the powerful families of the West competed to lay on the most extravagent meals, and as a result the best chefs and their recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, verifying, and writing down the recipes that were being prepared for the better households. The TV revolution brought us TV cooks and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like the ones you can find on the site you are now reading. |
