The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into ancient history, at least as far back as the ancient Egyptians, and maybe further still. Having said that, these, early cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Later on, in The time of the romans 25BC a man called Apicius created a number of scripts detailing recipes cooked by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into appetizers, main course and afters, something that is very familiar to us today. This early Roman chef tells us how the ancient Romans were skilled in the use of many different herbs, including some familiar names like bay, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many spices and herbs from Arab countries, including coriander, parsley, basil and rosemary. These new culinary innovations led to a torrent in manuscripts on food, some of which still exist in private collections. When we get to the 20th century, cooking publications were in great demand, mostly due to more people being able to read, more leisure time and being a little richer. The TV revolution brings us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on this web site. |
