Knead dough with cheese or chicharrones until smooth. Shape into
4-inch discs and deep-fry in hot oil until crispy. Drain on paper
towels and serve hot. These arepas can also be cooked on a griddle
and served with butter.

The History of Recipes
Transcribed cooking instructions as an idea can be observed way back into antiquity, in fact as far as early Egypt, and possibly even further than that. Interesting though that maybe, these, old recipes were just primitive hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history are some stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Moving our culinary historical trip onwards, there were a couple of books which appeared in the 14th Century : a book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Although the titles sound familiar, these two books have no connection with the indian food that is familiar to us all today, but rather recipes for the types of meals enjoyed by the rich and wealthy people of that period. In the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created an explosion in recipe publications, many of which still exist in private collections. Over the following few centuries, the rich and powerful families of Wesstern Europe strove to lay on the most extravagent meals, and consequentially cooks and their collection of recipes increased in prestige. Even so, it was during the 19th century that haute cuisine and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down recipes that were common in the better off homes of the day. The arrival of TV brings us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes such as those found on this recipe site. |
