The History of Recipes
We can read the history of written recipes way back into ancient history, at least as far back as ancient Egypt, and maybe even further. However, sadly, these ancient recipes were just simple hieroglyphic or cunieform recipes for preparing meals.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Later on, we have two recipe books which appeared in the 1300s - a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these two books are not about the spicy food that is familiar to us all today, but rather recipes for the types of meals prepared for the rich people of the time. Later on in the 1400s, knights returning from the crusades brought us many foods and herbs from the holy land, including spices such as coriander, parsley, and rosemary. These new foods and spices led to a torrent in manuscripts on cookery, most of which still exist in private libraries. For the next few years, the rich families of Europe competed to serve up the most exotic meals, and consequentially chefs and their recipes were highly sought after. Nevertheless, it was during the nineteenth century that cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and writing down the recipes of their peers. By the advent of the twentieth century, recipe books were in great demand, mostly as a result of better eduction, increased leisure time and being a little richer. The introduction of the TV brought us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on sites such as this. |
