The History of Recipes
Academics have tracked the existance of recipes far back into distant history, certainly as far back into recorded history as ancient Egypt, and maybe further still. Interesting though that maybe, generally, these ancient records were just primitive pictorial recipes for preparing food.
Interestingly, the oldest recipe discovered, according to experts is a collection of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. During Roman times around 25BC a roman called Apicius wrote a collection of documents detailing recipes enjoyed by wealthy Romans. In his publication, Apicius recounts how the meals were split into starters, main meal and afters, something we still use today. Aspicius recounts how the cooks of his times made use of a wide range of aromatic flavours, including a few that are still present in modern kitchens for example bay, rue and dill. As our culinary historical trip moves on a few more years we find a couple of recipe books which date from the 14th Century ; a recipe book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, they have no connection with the spicy food that is familiar to us all today, but rather recipes for the types of food served to the rich and wealthy people of the period. In the fifteenth century, people returning from the crusades brought us many new foods and herbs from the East, such as basil and rosemary. The introduction of these new tastes prompted a torrent in recipe publications, the majority of which are kept safe in private collections. By the arrival of the 20th century, cookery books were increasing in popularity mostly as a result of increased literacy, people having more free time and disposable income. |
