Ingredients:
Leg of lamb many cloves of garlic lots of oregano and pepper lots of
lemon juice a bit of salt Place many cloves of garlic under the
skin/into the meat all around the leg. Sprinkle lots of oregano,
pepper, lots of lemon juice, and a bit of salt on to the meat. Cover
with aluminum foil & bake. The meat should still be brown/pink when
done (Approx 1.5 hrs). I like to uncover the last 1/2 hour to get a

The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions far back into distant history, in truth as far back into recorded history as pharonic Egypt, and possibly even further. However, generally, these ancient records were just very basic hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe in existence, according to food historians are a few clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. As we move into The time of the romans 25BC a roman called Apicius wrote a collection of documents which described recipes prepared by his fellow Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, main course and afters, something that is very familiar to us today. Aspicius tells us how the ancient chefs used many aromatic flavours, including a few that will be familiar to modern chefs like basil, rue and asafoetida. During the next few hundred years, the powerful and wealthy tried to serve the most extravagent meals, and as a consequence, cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, trying out, and publishing recipes to help cooks of their time. By the time we get to the twentieth century, cookbooks are increasing in popularity mostly as a result of more people being able to read, more spare time and having more money to spend. |
