42 large mushrooms
1 lb ground venison
1 cup wheat tortilla bread crumbs
1/2 cup minced coriander
2 tbsp corn oil
1 salt and pepper to taste
Directions
Remove stems form mushrooms and chop finely; reserve caps. Combine
chopped stems and remaining ingredients in bowl; mix well. Stuff
mixture into reserved mushromm caps. Place on baking sheet. Bake at
350 degrees for 25 to 35 minutes or until heated through.

The History of Recipes
It is possible to read the history of `recipes` back into distant history, in truth as far back as the ancient Egyptians, and possibly even further. Interesting though that maybe, these, old cookbooks were just basic hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered, according to experts in ancient history are some ancient tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Later on, in The time of the roman empire 25BC a Roman scholar, called Apicius, assembled some scrolls which described recipes cooked by his fellow Romans. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. He also describes how the ancient chefs made use of many different spices, including many that are still in use today such as thyme, rue and asafoetida. Later, there are two books which date from the 1300s ; a book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these are not about the indian food that appears on menues today, but instead descriptions of the types of food cooked for the rich and wealthy people of that time. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the holy land, including spices such as parsley and basil. The introduction of these new herbs and spices prompted a torrent in recipe manuscripts, some of which are kept safe in private collections. For the decades that followed, the wealthy families of Europe tried to offer the most exotic banquets, and consequentially chefs and their recipe collections increased in prestige. Even so, it wasn`t until the nineteenth century that haute cuisine and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and recording popular recipes of the day. By the time we get to the 1900s, recipe publications are starting to become popular mostly due to better eduction, more spare time and a general increase in wealth. The arrival of television brought us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on this web site. |
