The History of Recipes
Food historians have tracked the existance of recipes far back into the distant past, certainly as far into history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these old recipes were just primitive hieroglyphic instructions for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. During Roman times around 25BC a roman called Apicius created a few documents describing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main course and afters, a style of dining still practiced today. This early Roman chef describes how the chefs of Roman times made use of a wide range of aromatic flavours, including a few that are still present in modern kitchens such as thyme, rue and parsley. In the fifteenth century, people returning from the crusades brought us many spices and herbs from the holy land, including spices like coriander, parsley, basil and rosemary. These new spices and herbs caused an increase in manuscripts on cookery, many of which are kept safe in private libraries. During the succeeding few hundred years, the upper classes competed with each other to lay on the most exotic banquets, and consequentially the best chefs and their collection of recipes could command a high salary. Even so, it wasn`t until the nineteenth century that cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. Like it or not, the introduction of television gave us cooking programs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to search through thousands of recipes just like those on sites such as the one you are reading now. |
