The History of Recipes
Written recipes as a concept can be found back into antiquity, at least as far into history as pharonic Egypt, and quite possibly further than that. Interesting though that is, sadly, these ancient cookbooks were just simple hieroglyphic instructions for food preparation.
During Roman times 25BC a roman called Apicius compiled a few documents describing recipes enjoyed by his fellow Romans. In his publication, Apicius tells us how the meals were divided into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the early Romans were skilled in the use of many spices, including a few you will know for example thyme, fennel and parsley. In the fifteenth century, people returning from the crusades brought us many foods and spices from the East, such as coriander, basil and rosemary. These new foods and spices was responsible for a torrent in manuscripts on cooking, the majority of which are kept safe in private libraries. By the arrival of the 1900s, cookery publications are in high demand, as a result of increased literacy, people having more free time and disposable income. |
