The History of Recipes
It is quite possible to track the history of recipes way back into the far past, in fact as far back into history as early Egypt, and maybe further still. In practice though, these, early cookbooks were just basic hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe found, according to experts is a series of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. During Roman times 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, something that is very familiar to us today. This early Roman chef informs us how the Romans were skilled in the use of a good variety of spices and herbs, including many that are still in use today for example thyme, rue and dill. Later, in the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the East, including coriander, basil and rosemary. The introduction of these new tastes caused an explosion in manuscripts on cookery, some of which still exist in private collections. During the succeeding few centuries, the upper-class families of Europe strove to serve up the most extravagent meals, and as a result the best cooks and their recipes became highly prized. However, it wasn`t until the 19th century the formal cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, testing, and recording recipes common in their social group. Like it or not, the introduction of TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting everybody to access thousands of recipes such as those found on this recipe site. |
