The History of Recipes
We are able to trace the history of written recipes far back into history, certainly as far back as the early Egyptians, and maybe further still. Having said that, these, early cook books were just simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius wrote a number of documents describing recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the chefs of Roman times made use of many spices and herbs, including a few that will be familiar to modern chefs for example basil, fennel and dill. Later, in the fifteenth century, people returning from the crusades brought back many foods, spices and herbs from the holy land, including parsley and basil. These new culinary innovations prompted an increase in publications on food, the majority of which are now in private libraries. By the advent of the 20th century, cook books were in high demand, due to better eduction, more leisure time and being a little richer. The revolution that is television gave us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes like the ones you can find on this site. |
