14 oz can artichoke hearts-drained and ch, opped
1 cup parmesan cheese -- grated
6 oz can crabmeat -- drained and flaked
1/2 cup mayonnaise
Directions
Preheat oven to 325F. Combine first 4 ingredients in bowl. Transfer
to 8 1/2 x 5" baking dish. Sprinkle with paprika. Bake until top is
browned, about 30 mins. Serve hot with water crackers.

The History of Recipes
Recipes as an idea can be tracked far back into distant history, certainly as far as the Egyptians, and possibly even further. Interesting though that is, in the main part, these early cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, is a series of clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Progressing into Roman times 25BC a roman called Apicius wrote a collection of documents detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main course and dessert, something we still use today. Aspicius describes how the Romans used many spices, including a few that will be familiar to modern chefs for example bay, rue and dill. Later on, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab cooking, including spices such as coriander, basil and rosemary. These new foods and tastes caused a torrent in recipe publications, most of which are kept safe in academic collections. Over the succeeding few centuries, the powerful and wealthy competed to lay on the best banquets, and as a consequence, chefs and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and publishing the recipes of their peers. When we get to the twentieth century, cookbooks are highly popular due to more people being able to read, more spare time and being a little richer. |
