The History of Recipes
Experts have traced the existence of recipes way back into the far past, certainly as far back as pharonic Egypt, and potentially, even further back. However, in the main part, these early cook books were just basic hieroglyphic or cunieform recipes for preparing food.
During the time of the Romans a man called Apicius compiled a collection of documents which described recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main meal and desserts, a very modern way of dining. This early Roman chef informs us how the Roman cooks used many herbs, including some that we all recognise such as thyme, rue and parsley. Later on, in the 15th century, the Crusaders brought back many new foods and spices from middle-east cuisine, including parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in books on cookery, most of which are now in private libraries. When we get to the 20th century, cooking books were increasing in popularity as a result of higher levels of literacy, people having more spare time and having more money. |
