16 large field mushrooms
4 oz chopped onions
4 oz whole wheat breadcrumbs
4 oz sausage meat
1 tsp chopped sage
1 salt and pepper
Directions
Wash and peel mushrooms. Remove stalks and discard.
Brush mushrooms with melted butter. Fry onions in remaining butter.
When tender, mix onion and butter with breadcrumbs, sausagemeat,
herbs and seasonings.
Divide among the mushrooms. Place mushrooms in a shallow ovenproof
dish, pour 4 tablespoons of water into the bottom of the dish, and
bake for 15-20 minutes in a moderate oven.

The History of Recipes
Experts have found proof that recipes existed way back into antiquity, at least as far back into history as early Egypt, and possibly even further. In practice though, mostly, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Later on, in Roman times 25BC a roman called Apicius compiled a number of documents describing recipes prepared by the Romans. He describes how the meals were divided into appetizers, main course and desserts, a very modern way of dining. Additionally, he informs us how the ancient Romans were skilled in the use of a good variety of spices, including a few that will be familiar to modern cooks like bay, mint and dill. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the holy lands, including spices such as coriander, basil and rosemary. The introduction of these new tastes led to an increase in books on cooking, most of which are now in private libraries. Like it or not, the introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes such as those found on this recipe site. |
