16 large field mushrooms
4 oz chopped onions
4 oz whole wheat breadcrumbs
4 oz sausage meat
1 tsp chopped sage
1 salt and pepper
Directions
Wash and peel mushrooms. Remove stalks and discard.
Brush mushrooms with melted butter. Fry onions in remaining butter.
When tender, mix onion and butter with breadcrumbs, sausagemeat,
herbs and seasonings.
Divide among the mushrooms. Place mushrooms in a shallow ovenproof
dish, pour 4 tablespoons of water into the bottom of the dish, and
bake for 15-20 minutes in a moderate oven.

The History of Recipes
Written recipes as a concept can be traced far back into history, at least as far back as the Egyptians, and possibly even further than that. However, sadly, these ancient cook books were just primitive hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe found, according to experts in ancient history is a collection of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Much later, in Roman times a roman called Apicius wrote a number of documents detailing recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main meal and desserts, a very modern way of dining. Aspicius also describes how the ancient chefs were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens such as thyme, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from the Middle-East, such as coriander, parsley, and rosemary. These new herbs and spices prompted an explosion in books on cookery, the majority of which still exist in private cookery archives. When we get to the twentieth century, cook books were in great demand, due to increased literacy, people having more free time and a general increase in wealth. The TV revolution gave us TV cookery programs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on sites such as this. |
