16 large field mushrooms
4 oz chopped onions
4 oz whole wheat breadcrumbs
4 oz sausage meat
1 tsp chopped sage
1 salt and pepper
Directions
Wash and peel mushrooms. Remove stalks and discard.
Brush mushrooms with melted butter. Fry onions in remaining butter.
When tender, mix onion and butter with breadcrumbs, sausagemeat,
herbs and seasonings.
Divide among the mushrooms. Place mushrooms in a shallow ovenproof
dish, pour 4 tablespoons of water into the bottom of the dish, and
bake for 15-20 minutes in a moderate oven.

The History of Recipes
Food historians have tracked the existence of recipes far back into the far past, at least as far into history as the early Egyptians, and potentially, even further back. Having said that, these, old recipes were just very basic pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe discovered, according to food historians is a collection of clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. As we move into The time of the roman empire 25BC a roman called Apicius created some documents detailing recipes cooked by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, something we still use today. This early Roman chef tells us how the early Romans were skilled in the use of many different herbs and spices, including a few you will know for example basil, fennel and dill. Over the next few centuries, the powerful and rich competed to offer the most exotic banquets, and consequentially the best chefs and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, verifying, and writing down the recipes of their peers. By the arrival of the twentieth century, cookbooks are in great demand, due to better eduction, people having increased leisure time and having more money to spend. The introduction of television gave us TV cookery programs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to access thousands of recipes like those on the site you are now reading. |
