Baked Mushrooms Recipe

Ingredients

16 large field mushrooms
4 oz chopped onions
4 oz whole wheat breadcrumbs
4 oz sausage meat
1 tsp chopped sage
1 salt and pepper


Directions

Wash and peel mushrooms. Remove stalks and discard.
Brush mushrooms with melted butter. Fry onions in remaining butter.
When tender, mix onion and butter with breadcrumbs, sausagemeat,
herbs and seasonings.
Divide among the mushrooms. Place mushrooms in a shallow ovenproof
dish, pour 4 tablespoons of water into the bottom of the dish, and
bake for 15-20 minutes in a moderate oven.

Aspicius also describes how the ancient chefs were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens such as thyme, rue and asafoetida.

Later on, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from the Middle-East, such as coriander, parsley, and rosemary. These new herbs and spices prompted an explosion in books on cookery, the majority of which still exist in private cookery archives.

When we get to the twentieth century, cook books were in great demand, due to increased literacy, people having more free time and a general increase in wealth.

The TV revolution gave us TV cookery programs and the spin-off recipe books.
