2 1/2 lb parsnips
2 oz butter or bacon fat
3 tbsp stock
1 salt and pepper
1 pinch nutmeg
Directions
Peel parsnips, quarter, and remove any woody core. Parboil for 15
minutes. Place in an ovenproof dish. Add stock and sprinkle with
salt, pepper and nutmeg. Dot with butter and bake for 30 minutes on a
low shelf in a moderate oven. (Generally parsnips are baked in the
same oven as the main meat dish, whose cooking temperature governs
that of the parsnips.)

The History of Recipes
We are able to trace the history of written recipes back into the distant past, in fact as far back into history as ancient Egypt, and maybe even further. Interesting though that is, sadly, these early cookbooks were just simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics are some stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As we move on, there are some books which date from the 1300s : a cookery book titled `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are nothing to do with the indian food that appears on menues today, but rather descriptions of the types of meals prepared by the cooks of the rich and wealthy people of the period. During the next few centuries, the powerful families of Wesstern Europe strove to serve the most exotic meals, and because of this chefs and their collection of recipes were at a premium. However, it was during the 1800s that haute cuisine and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and publishing recipes that were common in the better off homes of the day. By the advent of the 20th century, recipe publications were greatly in demand mostly due to higher levels of literacy, increased leisure time and having more disposable income. |
