1 2 idaho potatoes
Directions
3 TB grated Jalapeno Jack cheese
3 to 4 scallions, green parts
: -only, chopped
1 TB chopped cilantro
: Juice of 1 lime
2 TB to 3 TB sour cream
: Salt
1/4 c canola oil
8 corn tortillas
Preheat oven to 375 degrees. Bake potatoes until tender, 1 to 1 1/2
hours. Cool, peel and dice. Combine potatoes with cheese, scallion
greens, cilantro, lime juice and sour cream, and mix thoroughly.
Season to taste with salt and chill. Heat 1/4-inch of canola oil in a
skillet. Fry tortillas, one at a time, just until they bubble and
soften. Don't let them get crisp. Remove with tongs and pat off
excess oil with paper towels.
Divide filling between the tortillas and roll up. Place on a greased
baking sheet and bake for 15 minutes. Serve 2 enchiladas per person
on a pool of Ancho Ranchero Sauce, garnished with Pico De Gallo Corn
and topped with Mexican Tortilla Sal

The History of Recipes
Experts have tracked the existance of recipes back into antiquity, in fact as far as the Egyptians, and maybe even further. Interesting though that is, in the main part, these early cookbooks were just primitive hieroglyphic or cunieform recipes for preparing food.
Later on, in Roman times 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into appetizers, main course and afters, something that is very familiar to us today. Additionally, he recounts how the ancient Romans were skilled in the use of many different spices, including a few that are still present in modern kitchens for example bay, rue and dill. Over the succeeding few centuries, the powerful families of the West competed with each other to offer the most extravagent banquests, and because of this chefs and their recipe collections were much in demand. Nevertheless, it was during the 1800s that cookery and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and writing down recipes to allow everyone to enjoy them. When we get to the 20th century, recipe books are in great demand, as a result of higher levels of literacy, leisure time and having more disposable income. |
