The History of Recipes
It is possible to follow the history of `recipes` back into history, in fact as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these old records were just very simple hieroglyphic recipes for meal preparation.
During the time of the Romans a man called Apicius compiled a few documents describing recipes cooked by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the early Romans used a wide range of aromatic flavours, including a few that are still present in modern kitchens such as thyme, fennel and parsley. Over the next few hundred years, the wealthy families of the West competed with each other to lay on the most exotic banquets, and as a result chefs and their recipes could command a high salary. However, it wasn`t until the 1800s the formal cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and recording popular recipes of the day. When we get to the 1900s, cooking books were in high demand, due to increased literacy, increased leisure time and having more money to spend. |
