The History of Recipes
Recipes as a concept can be found back into the far past, certainly as far back into history as the Egypt of the Pharoahs, and possibly even further. Having said that, generally, these ancient cookbooks were just simple hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a man called Apicius created a number of scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals were split into starters, main course and desserts, something that is very familiar to us today. Additionally, he tells us how the cooks of Roman times used many spices, including some that we all recognise such as basil, rue and dill. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from Arab countries, such as coriander, parsley, and basil. The introduction of these new foods and spices was responsible for an increase in cookery books, some of which are now in private cookery archives. The TV revolution brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to access thousands of recipes like the ones you can find on this recipe site. |
