1 lb salmon fillets
1 tsp oregano, dried
2 cl garlic, minced
1 pepper to taste
1 tomatoes, thinly sliced
1 small onions, thinly sliced
2 tbsp parsley, chopped
1/4 cup dry bread crumbs
1 tbsp vegetable oil
Directions
Spray shallow baking pan with non-stick coating. Place fish in baking
pan and sprinkle with oregano, garlic and pepper. Layer with tomato,
onion and parsley. Mix bread crumbs with oil and sprinkle on top of
fillets. Bake at 450^ F. for 8 to 10 minutes or just until fish
flakes easily.

The History of Recipes
It is possible to follow the history of meal recipes far back into ancient history, in truth as far as pharonic Egypt, and potentially, even further back. In practice though, generally, these ancient recipes were just simple hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the romans around 25BC a roman called Apicius created a collection of documents which described recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and desserts, something that is very familiar to us today. Additionally, he recounts how the ancient Romans made use of a good variety of spices and herbs, including a few that are still present in modern kitchens such as bay, rue and asafoetida. For the decades that followed, the rich and powerful families of the West tried to lay on the most extravagent banquests, and because of this the best chefs and their recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and recording popular recipes of the day. By the time we get to the 20th century, cookery books are increasing in popularity as a result of higher levels of literacy, people having increased leisure time and a general increase in wealth. |
