1/4 c olives -- chopped
1 ts garlic -- finely minced
3 TB basil -- chopped*
3 ts pine nuts -- toasted
1 TB extra virgin olive oil
1/4 c Parmesan cheese -- grated

with salt and pepper to taste. Carefully stuff the tomatoes and
sprinkle with the cheese. Bake for 20 minutes and serve immediately.
TIP: ROASTING TOMATOES
Heat a dry cast iron skillet until almost smoking, and add your whole

The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions way back into distant history, at least as far into history as early Egypt, and maybe even further. Interesting though that is, generally, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered, according to academics is a series of tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Closer to modern times, there were some recipe books which appeared in the 1300s : a cookery book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these are unconnected to the indian curry that is popular today, but rather accounts of the types of meals served to the rich. During the next few hundred years, the upper-class families of the West competed to offer the most exotic meals, and consequentially chefs and their collection of recipes were much in demand. However, it wasn`t until the 19th century that fine cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, trying out, and writing down the recipes of their peers. Like it or not, the introduction of TV brings us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, allowing us all to access thousands of recipes just like those on sites such as the one you are reading now. |
