The History of Recipes

We are able to trace the history of written recipes way back into antiquity, in truth as far as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, these, old recipes were just very basic hieroglyphic instructions for preparing food.

In fact, the oldest recipe discovered so far, according to experts is a series of tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful.

Progressing into Roman times around 25BC a man called Apicius created a collection of scripts describing recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Additionally, he tells us how the cooks of Roman times used a good variety of aromatic flavors, including a few that are still present in modern kitchens such as bay, fennel and asafoetida.

Later on in the 1400s, knights returning from the crusades brought us many foods and spices from Arab cuisine, including spices such as parsley, basil and rosemary. These new spices and herbs created an eruption in manuscripts on food, many of which are now in private collections.

For the next few years, the rich families of Europe competed with each other to serve the most extravagent meals, and because of this chefs and their collection of recipes were highly sought after. Even so, it wasn`t until the 19th century that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and recording recipes for their fellow cooks to enjoy.

By the advent of the twentieth century, cooking publications are in high demand, as a result of higher levels of literacy, more spare time and disposable income.

The introduction of the TV brought us cooking programs and the demand for the accompanying recipe books.

Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes such as those found on sites such as this.
