1 clove garlic, -- peeled
1 tbsp dijon mustard
3 tbsp balsamic vinegar
1 salt and black pepper to taste
1 cup olive oil
Directions
Preparation : Put garlic in the food processor fitted with a steel
blade and add mustard and vinegar. Mix quickly. Add salt and pepper
to taste. Dribble oil into bowl slowly in a steady stream until it is
thick and creamy and all the oil has been incorporated. Add salt and
pepper to taste.

The History of Recipes
Historians have traced the existence of recipes back into antiquity, at least as far back into recorded history as ancient Egypt, and possibly even further. However, generally, these old records were just basic hieroglyphic instructions for food preparation.
Interestingly, the oldest recipe discovered so far, according to academics is a collection of tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius created a number of scripts detailing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Additionally, he informs us how the Roman cooks made use of a good variety of herbs and spices, including a few you will know for example basil, rue and asafoetida. During the succeeding few centuries, the rich families of the West competed to serve the most exotic banquets, and because of this the best chefs and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that fine cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes of the day. Like it or not, the introduction of television brings us TV cooks and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on our web site. |
