The History of Recipes
It is actually possible to trace the history of recipes way back into antiquity, certainly as far back as early Egypt, and possibly even further than that. Interesting though that is, generally, these old cookbooks were just basic hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. As we move into Roman times 25BC a roman called Apicius compiled a number of documents describing recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into appetizers, main course and desserts, something we still use today. Aspicius tells us how the Romans used a good variety of aromatic flavors, including a few that are still present in modern kitchens such as basil, rue and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many foods and herbs from middle-east cuisine, such as coriander, parsley, and rosemary. The introduction of these new culinary ideas led to a torrent in books on cooking, most of which are kept safe in private collections. During the next few centuries, the rich and powerful families of Wesstern Europe competed with each other to serve the most extravagent meals, and because of this cooks and their recipes were greatly in demand. However, it was during the nineteenth century that fine cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and recording recipes for their fellow cooks to enjoy. By the advent of the 20th century, cookery books were in high demand, mostly as a result of higher levels of literacy, people having more free time and being a little richer. The revolution that is television brings us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes such as those found on sites such as this. |
