The History of Recipes
We are able to follow the history of `recipes` way back into the far past, certainly as far into history as the Egypt of the Pharoahs, and maybe even further. However, sadly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe found, according to experts is a series of ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the roman empire around 25BC a man called Apicius created some scripts describing recipes cooked by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into starters, main meal and dessert, a very modern way of dining. This early Roman chef informs us how the cooks of Roman times were skilled in the use of a wide range of herbs and spices, including many that are still in use today such as thyme, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from the Middle-East, including spices such as parsley, basil and rosemary. These new herbs and spices led to an explosion in publications on food, the majority of which are now in private cookery archives. During the following few hundred years, the upper-class families of Europe competed with each other to lay on the most extravagent banquests, and as a result chefs and their collection of recipes became highly prized. Nevertheless, it was during the 19th century that fine cookery and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, verifying, and recording the recipes that were being prepared for the better households. By the advent of the 20th century, cooking books are in high demand, as a result of increased literacy, increased leisure time and disposable income. |
