3 cup [about 10 medium] bananas
1/4 cup lemon juice
1/4 cup finely chopped maraschino cherries
6 1/2 cup sugar
1 bottle [6 ounces] liquid pectin
Directions
Thoroughly mash bananas. Measure 3 cups into a large saucepan. Add
lemon juice, cherries and sugar; mix well. Bring to hard rolling
boil; boil hard 1 minute, stirring constantly. Remove from heat
;quickly stir in pectin. Ladle into clean, hot jars. Seal. Makes 8 or
9 half-pints.

The History of Recipes
Experts have found proof that recipes existed way back into the distant past, in truth as far into history as the early Egyptians, and potentially, even further back. Having said that, mostly, these ancient records were just very simple hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to experts are a few clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later on, in Roman times 25BC a man called Apicius assembled a few documents which described recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the cooks of his times were skilled in the use of a good variety of aromatic flavours, including some that we all recognise for example thyme, mint and dill. In the fifteenth century, the Crusaders brought back many new foods, spices and herbs from Arab countries, including spices like basil and rosemary. The introduction of these new foods and spices caused a surge in recipe publications, the majority of which are kept safe in private collections. During the succeeding few centuries, the powerful families of the West tried to serve up the best banquets, and as a consequence, the best chefs and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collecting, trying out, and recording recipes of the day. By the arrival of the 1900s, recipe books are increasing in popularity due to more people being able to read, people having increased spare time and disposable income. |
