The History of Recipes
We are able to track the history of `recipes` far back into history, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. Having said that, in the main part, these old cook books were just very simple hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. As we move on, we find two books published in the fourteenth century - a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books are unconnected to the indian food that we all know today, but rather descriptions of the types of food enjoyed by the upper classes of the period. Later, in the fifteenth century, people returning from the crusades brought back many new foods and spices from middle-east cuisine, including spices like coriander, parsley, and basil. The introduction of these new foods and spices created a torrent in recipe manuscripts, most of which are now in academic collections. During the next few centuries, the powerful and rich houses strove to lay on the most extravagent banquests, and because of this the best chefs and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording recipes to help cooks of their time. The revolution that is television gave us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through massive numbers of recipes like those on this recipe site. |
