The History of Recipes
Written cooking instructions as a concept can be found way back into history, certainly as far as the Egypt of the Pharoahs, and quite possibly further than that. However, these, ancient recipes were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history are some tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. As our culinary historical trip moves to more modern times there were a couple of cookery books published in the fourteenth century - a book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, these are nothing to do with the indian food that we all know today, but rather recipes for the types of food prepared by the cooks of the upper classes of the time. Over the following few centuries, the upper-class families of the West competed to lay on the most extravagent banquests, and as a result the best chefs and their recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. When we get to the 1900s, cookery publications are highly popular as a result of increased literacy, people having increased free time and a general increase in wealth. |
