The History of Recipes
We can follow the history of meal recipes way back into distant history, in fact as far back into history as ancient Egypt, and quite possibly further than that. In practice though, sadly, these early records were just very basic hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a few documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, entrees and dessert, something that is very familiar to us today. Additionally, he informs us how the chefs of Roman times made use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks like basil, mint and dill. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from the holy lands, including spices like parsley, basil and rosemary. These new culinary innovations created a surge in publications on food, some of which are now in private libraries. For the centuries that followed, the upper-class families of Wesstern Europe strove to serve up the most exotic meals, and consequentially the best chefs and their collection of recipes were highly sought after. Notwithstanding that, it was during the 1800s that fine cookery and recipe publications became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and publishing recipes to allow everyone to enjoy them. By the time we get to the 20th century, cookery publications were greatly in demand mostly as a result of better eduction, people having increased free time and being a little richer. The arrival of television brings us TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on our site. |
