The History of Recipes
Transcribed cooking instructions as an idea can be found back into the far past, certainly as far back into history as the early Egyptians, and potentially, even further back. In practice though, sadly, these early cookbooks were just basic hieroglyphic recipes for preparing food.
The truth of the matter is, the oldest recipe in existence, according to academics are a few ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into appetizers, entrees and afters, something that is very familiar to us today. He also recounts how the Romans were skilled in the use of many different spices and herbs, including some that we all recognise such as bay, mint and asafoetida. During the following few hundred years, the powerful and wealthy houses competed to serve the best banquets, and as a consequence, the best chefs and their recipes were much in demand. Even so, it was during the 1800s that cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, testing, and recording recipes for their fellow cooks to enjoy. The arrival of television gave us TV cooks and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like those on this site. |
