5 lb beef short ribs
3 cup black jack bbq sauce
Directions
Place ribs in a flat pan or dish. Pour sauce over ribs, turning so as
to coat both sides; pierce meat with a large fork. Marinate 8 hrs.

avoid burning Broil or cook over coals for 10 mins. Brush with
marinade and cook 4-5 mins. more. Heat remaining sauce and serve with
ribs.(Ribs may be cooked in a covered pan in a 350 deg. oven for 1
1/2 hours, if desired.)

Aspicius informs us how the cooks of Roman times were skilled in the use of a good variety of aromatic flavors, including a few you will know such as basil, fennel and dill. In the 15th century, knights returning from the crusades brought back many new foods and herbs from the Middle-East, including coriander, parsley, and basil. The introduction of these new foods and spices created an eruption in manuscripts on food, the majority of which still exist in private collections. Over the following few centuries, the upper-class families of Wesstern Europe tried to lay on the most extravagent meals, and as a result the best cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collecting, trying out, and writing down popular recipes of the day. When we get to the 1900s, cooking books are increasing in popularity mostly as a result of increased literacy, more leisure time and disposable income. |
