The History of Recipes
It is quite feasible to prove the history of written cooking instructions way back into the far past, certainly as far back into recorded history as the ancient Egyptians, and possibly even further than that. Having said that, sadly, these early records were just very simple hieroglyphic instructions for meal preparation.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, he describes how the meals were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius also informs us how the Romans used many different herbs, including a few that are still present in modern kitchens like thyme, rue and asafoetida. For the centuries that followed, the upper-class families of the West strove to lay on the most exotic banquets, and consequentially chefs and their collection of recipes were highly sought after. Even so, it wasn`t until the 1800s that fine cookery and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and recording recipes to allow everyone to enjoy them. The introduction of the TV brings us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like those on the site you are now reading. |
