The History of Recipes
Transcribed cooking instructions as a concept can be observed way back into antiquity, certainly as far as ancient Egypt, and possibly even further. However, generally, these old cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to academics are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Additionally, he recounts how the cooks of his times used a good variety of herbs, including a few that are still present in modern kitchens such as thyme, mint and asafoetida. Over the next few hundred years, the upper-class families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and consequentially chefs and their recipe collections were at a premium. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, verifying, and recording the recipes that were being prepared for the better households. When we get to the 1900s, cooking books are in high demand, as a result of better eduction, leisure time and having more disposable income. The arrival of TV brings us cooking programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on this web site. |
