The History of Recipes
Recipes as an idea can be observed way back into antiquity, in truth as far back into recorded history as ancient Egypt, and quite possibly further than that. Interesting though that maybe, sadly, these old cookbooks were just very simple hieroglyphic instructions for preparing food.
In an interesting twist, the most ancient recipe in existence, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius compiled a number of documents which described recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Romans were skilled in the use of a wide range of aromatic flavors, including many that are still in use today like bay, fennel and parsley. In the 15th century, people returning from the crusades brought us many new spices and herbs from Arab cooking, including parsley and basil. These new spices and herbs prompted a torrent in manuscripts on food, some of which are kept safe in private collections. Over the next few hundred years, the rich and powerful families of Wesstern Europe tried to serve the most exotic meals, and as a consequence, the best cooks and their recipe collections were greatly in demand. Even so, it wasn`t until the nineteenth century that formal cookery and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, trying out, and recording recipes that were common in the better off homes of the day. When we get to the 1900s, cookery books were increasing in popularity mostly due to more people being able to read, people having increased free time and being a little richer. |
