The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into antiquity, in fact as far back as the ancient Egyptians, and potentially, even further back. However, mostly, these old records were just primitive pictorial instructions for preparing food.
Interestingly, the most ancient recipe in existence, according to food historians are some stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Closer to modern times, there are some interesting books which date from the fourteenth century ; a book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these books are not about the spicy food that appears on menues today, but rather descriptions of the types of meals cooked for the upper classes of that time. Later, in the 15th century, the Crusaders brought back a variety of spices and herbs from Arab cooking, including spices like rosemary and coriander. These new herbs and spices created a torrent in cookery books, some of which still exist in academic collections. During the next few hundred years, the wealthy families of the West strove to offer the most exotic banquets, and as a consequence, the best chefs and their recipe collections could command a high salary. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, verifying, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cooking books were greatly in demand mostly due to more people being able to read, people having increased leisure time and having more money to spend. Like it or not, the introduction of TV brought us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this web site. |
