The History of Recipes
Written recipes as an idea can be found way back into ancient history, in fact as far into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, generally, these ancient cookbooks were just basic hieroglyphic or cunieform instructions for preparing food.
During the time of the Romans a man called Apicius compiled some scripts showing how to cook the recipes cooked by wealthy Romans. In his publication, he describes how the meals were separated into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also recounts how the Romans used many herbs, including many that are still in use today for example thyme, rue and dill. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from Arab cuisine, such as basil and rosemary. These new spices and herbs created an explosion in cookery books, many of which still exist in academic collections. When we get to the 20th century, cook books are highly popular mostly due to higher levels of literacy, more spare time and disposable income. |
