The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into ancient history, at least as far as ancient Egypt, and maybe further still. Interesting though that maybe, mostly, these old cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the oldest recipe found, according to food historians are some tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Later on, in The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes prepared by wealthy roman citizens. He describes how the meals of wealthy Romans were split into starters, main course and desserts, a style of dining still practiced today. Additionally, he tells us how the chefs of Roman times were skilled in the use of a wide range of spices and herbs, including some that we all recognise like bay, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us many foods and herbs from Arab cuisine, including basil and rosemary. The introduction of these new tastes was responsible for a torrent in recipe books, many of which are now in private cookery archives. During the following few hundred years, the wealthy families of Europe competed with each other to offer the most extravagent meals, and because of this the best cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the nineteenth century that cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, testing, and writing down recipes to allow everyone to enjoy them. The arrival of television brought us TV cookery programs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on this site. |
