The History of Recipes
Recipes as an idea can be traced back into the far past, in truth as far back as the early Egyptians, and potentially, even further back. However, mostly, these early recipes were just primitive hieroglyphic instructions for meal preparation.
During the time of the Romans a man called Apicius created a few documents which described recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. He also tells us how the ancient Romans were skilled in the use of a wide range of aromatic flavors, including some that we all recognise like bay, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from Arab countries, including spices like coriander, parsley, basil and rosemary. These new herbs and spices caused a surge in cookery books, many of which are now in private collections. When we get to the 20th century, cooking publications are starting to become popular due to more people being able to read, people having increased spare time and disposable income. |
