The History of Recipes
It is possible to track the history of `recipes` back into the distant past, in truth as far back into recorded history as ancient Egypt, and potentially, even further back. Interesting though that is, generally, these old cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. As we move into The time of the roman empire around 25BC a man called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into appetizers, entrees and afters, something that is very familiar to us today. This early Roman chef recounts how the Roman chefs made use of a good variety of aromatic flavours, including many that are still in use today for example basil, mint and parsley. Over the next few hundred years, the powerful families of the West strove to serve up the best banquets, and consequentially cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the 1800s that formal cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and recording recipes of the day. When we get to the 1900s, recipe books are greatly in demand due to better eduction, people having more free time and having more money. |
